The Pitts Peach
The Pitts Peach is an encore performance worth catching before it’s wheels-up. Back for its second week on the runway, this limited-time creation continues to turn heads with bold moves and sweeter notes than your average pie. Built on your choice of crust, it layers our housemade peach BBQ, smooth cream cheese, a light touch of mozzarella, fresh-cut local peaches, and crispy pancetta—all finished with one last streak of peach BBQ. It’s a daring flavor formation that’s equal parts sweet and smoky, crisp and creamy. Just like the Pitts Special biplane that inspired it, this pizza may be small in size but it packs a punch that still dazzles.
Hangar Hack
Leftover wings? Pull the meat, mix with a little ranch or hot sauce, and stuff it into a wrap or quesadilla for an easy next-day lunch. It’s like your favorite pizza night did a flyby on your fridge.
The Barnstormer Bite
Patrick McAlee (pronounced “Mack-a-Lee”) is the dynamic airshow pilot behind the custom Pitts S1S biplane known as the Blue Demon. Born in St. Louis and now based in Chicago, he grew up immersed in aviation—spurred by a family legacy of pilots and a life-changing visit to Oshkosh at just five years old—which ignited a lifelong passion for flight. A seasoned aviator, McAlee combines his background as a commercial airline pilot with deep aerobatic expertise honed through years of International Aerobatic Club (IAC) competition, where he regularly placed among the nation’s top ten Extreme Flight. The “Blue Demon” is a meticulously modified 1979 Pitts S1S—featuring lightweight steel tubing, fabric, carbon fiber side panels, a 235-hp Lycoming engine, and a custom 3-blade Catto (or GT) propeller—crafted for razor-sharp precision and high-performance aerobatics. Off the tarmac, he brings aviation to life through engaging STEAM outreach—think immersive VR, educational activity books, and all-ages programming.
Did You Know?
In 1910, Bessie Raiche became one of the very first American women to fly solo in an airplane— without any formal training! She and her husband built their own Wright-type biplane out of bamboo and silk, and Bessie took it to the skies in Mineola, New York. A true aviation pioneer, she was also a dentist and physician, proving that she wasn’t afraid to break barriers on the ground or in the air.
Speed Queen Rules The Skies
Fun Fact: On September 15, 1939, Jackie Cochran shattered the Fédération Aéronautique Internationale’s women’s speed record by averaging 305.93 miles per hour over a 1,000-kilometer course, flying from Burbank, CA, to San Mateo and back in her sleek Seversky AP-7A racer
The Pilots Pick
The Taildragger! Our classic red sauce and melty mozzarella take the runway, piled high with pepperoni, Italian sausage chunks, diced ham, and crispy bacon. This meat-lover’s masterpiece earns its name from the legendary taildragger aircraft—planes that balance power and grit with a third wheel on the back, built for short strips and daring landings. Just like its namesake, this pizza comes in hot, heavy, and ready to touch down with serious flavor. Meat lovers to backcountry bush pilots will enjoy this three-point landing of taste.
